Dinner number two is under my belt, and I have to tell you, so far I am loving this project.  It is such an incentive to keep cooking new and different dishes.  It adds excitement to an otherwise very mundane thing in life, which if you remember from my first JUST KEEP COOKING post, is exactly what I needed.  I made it through a Tuesday without eating tacos, I mean that’s a big deal. My sister-in-law Sam came over to share in tonights meal as well. 

So the dish of the night is kale and cauliflower couscous-I feel like I am getting skinnier just typing it!  I am trying to eat healthier with Brent being gone for work. I am not the biggest fan of meat. I tend to enjoy it way more when others prepare it. However, I often live by the saying my mom says “I will eat and enjoy anything that I don’t have to prepare it or cook”.  Back on track here, the idea of cauliflower couscous was very interesting to me.  This recipe was definitely out of my box. 

To start I had to boil some water and soak my cranberries, an easy enough process. While they soaked I chopped the cauliflower using my Ninga food processor.  This was quite a messy process, and I think I ended up using too much cauliflower.  

After that everything else was done in one pan, which was great when it came to the dishes! I sautéed some garlic and onion with salt.  (My husband always says that this is his favorite smell, and he thinks every meal should have garlic and onions in it.)  I added the cauliflower for it to brown, not gonna lie I don’t think I let it brown enough, it still looked pretty much the same as when I put it in the pan.

I chopped up some kale, green onion, cranberries, and almonds and added them all in the pan.  It cooked down with a few other ingredients.  Voila it was complete.

The process was easy enough, time for the taste test…

This rating I gave an average rating, the meal was good, but it was a lot of the same thing every bite.  I loved that it was so healthy and that I felt good after eating it. But, I was still hungry afterwards and not for more of the dish.  I believe the dish would be better as a side with some chicken or salmon.  Sam really enjoyed the dish and gave it a high 8.  However she often eats way healthier than I do on the normal.  I think I eat pretty well, but Sam puts kale in her smoothies everyday, which takes great commitment!!

Please note, Lorelai did not take her full nap and I had to wake her up from the half a nap she did take so she really did not want to eat anything.  So when she did not even want to try the dish I honestly did not push it and made her something else.  Avery did like the dish, and ate the bit that I gave her, which was probably equivalent to her 3 bites. She just had some other sides as well with the dish. 

The dish was good, not to messy, not a favorite but something I would be willing to try again and maybe add a few more things to it to switch it up.
